Ingredients

2 tsp. canola oil
2 Tbsp. Homestyle Chili Seasoning Mix
½ red pepper, diced
½ yellow pepper, diced
1 cup (250 mL) canned diced tomatoes
6 oz. (180 g) firm fleshed fish fillet (snapper or sea bass), cut into chunks
1 ½ cups (about 10 oz./300 g) mixed seafood
½ cup red kidney beans, drained and rinsed
Juice of 1 lime

Instructions

Preheat oven to 400°F. In a saucepan, heat the oil and Homestyle Chili Seasoning Mix with the red and yellow peppers for about 3-5 minutes until softened. Add the tomatoes, bring to a boil, lower the heat and simmer for a couple of minutes. Add the seafood, kidney beans and lime juice, stir into the sauce and heat for just a minute. Transfer to an oven-safe dish and bake for 15 minutes. Serve with our Traditional Sweet Corn Bread on the side or crumbled over top of seafood chili.
